The "no brainer" would be not to waste my time by taking it into the dealership just to replace that one plug for I can buy one and do it myself then I wouldn't have to worry about a service department working on my engine that know's absolutely nothing about the Santa Fe.

Tell me why you think that nobody should be touching their spark plugs to begin with? A spark plug is a spark plug and if one decides he wants to use whatever manufacturer plugs in his engine he should have the right to do so considering the replacement plugs meet or exceed the OEM plugs.

Just like you have the right to use whatever motor oil and oil filter you choose to use just as long as they meet the requirements. That is for us that will not take our Santa Fe's into the dealership just have the oil changed but rather do it ourselves. Am I going to use Quaker State brand motor oil just because my local Hyundai dealership buys it in bulk and uses it on all their vehicles.....no way Jose! Does all Hyundai dealerships use Quaker State brand motor oil?, I wouldn't think so. I think they take bids from oil manufacturers and decide on which brand they want to use based on how much money it cost them.

Hyundai probably didn't get Bosch as an OEM spark plug because they went for the cheaper bids.
